110g softened butter
110g golden caster sugar
2 large eggs

Step 2:Beat 110g of softened butter and 110g of golden caster sugar with an electric whisk until they are pale and fluffy. Then, add two big eggs at a time, scraping down the sides of the bowl as you go.
Step 3:Spoon the mixture into the cupcake cases after whisking together 110g self-raising flour, ½ tsp vanilla extract, and a pinch of salt.
Step 4:A skewer placed in the center of each cake should come out clean after 15 minutes of baking or until golden brown. Let cool on a wire rack until fully chilled.
Step 5:300g of icing sugar, 1 tsp vanilla extract, and a pinch of salt are added to 150g of softened butter after it has been whisked until it is extremely soft.
Step 6:Beat in 3 tablespoons milk after whisking until smooth (start gently to prevent an icing sugar cloud).
Step 7:Add the food coloring now if you wish to color. Transfer the cooled cupcakes using a spoon or a pipette.
Once your cupcakes have cooled to room temperature, you can start decorating them. Use a pastry bag to pipe your favorite frosting, such as vanilla cupcake frosting or blackberry frosting.
