Method One: Refrigerator Storage
Refrigerator storage is one of the easiest and most common ways to keep lychees fresh. Before storing them, we should carefully check every fruit and remove any lychees with damaged skin, soft areas, or signs of change.
One important tip is to avoid washing lychees before placing them in the refrigerator. Extra water on the surface can make them lose quality faster. Instead, we can gently clean the outer skin with a clean, slightly wet cloth.
After that, put the selected lychees into a breathable storage bag. A bag with small air holes is a good choice because it allows air circulation while helping control moisture. We should avoid placing too many fruits together. Spreading them in a thin layer can help each lychee stay in better condition.
Keep the bag in the refrigerator at around 4 to 7 degrees Celsius. With this method, lychees can usually stay fresh for about 7 to 10 days. When we take them out, letting them sit at room temperature for about 30 minutes can help improve their texture and aroma.
Method Two: Freezing Storage
For those who want to enjoy lychees after the main season, freezing is a very useful method. It helps preserve the natural sweetness and allows us to store them for around one month or longer.
First, remove the outer skin and carefully take out the seed. Place the fruit pieces into light salt water for 1 to 2 minutes. This step helps slow down color changes and keeps the fruit looking fresh.
Next, remove the extra moisture with kitchen paper. Arrange the lychee pieces separately on a tray or inside a storage container. Make sure they do not touch too much, so they will not stick together after freezing.
Place them in the freezer for about 2 to 3 hours until they become firm. Then transfer them into a sealed storage bag. Remove extra air from the bag before closing it.
When we want a refreshing treat later, we can simply take out the frozen lychees and enjoy their cool, sweet flavor.

The reason paper works well is that it can absorb extra moisture while helping maintain a balanced environment around the fruit.
To use this method, choose fresh lychees without washing them first. Wrap about 5 to 6 pieces together with dry paper, then add another layer outside for extra protection.
Place the wrapped fruit in a breathable box or basket. Keep it in a cool and shaded place with good air movement. A storage area around 10 to 15 degrees Celsius is suitable.
Using this technique, lychees can usually stay fresh for about 5 to 7 days. We should check them daily and remove any fruit that starts to change, helping the rest remain fresh.
Method Four: Light Salt Water Soaking
Light salt water soaking is another traditional way to extend the freshness of lychees. The salt water creates a gentle surface layer and helps slow down natural changes.
To prepare the mixture, add 30 grams of salt to 1 liter of water. Place the whole bunch of lychees into the mixture and soak them for about 10 minutes.
After soaking, remove the fruit and let it dry naturally in a place with good airflow. We can spread them on a clean surface or hang them in a suitable area.
This method can help lychees stay fresh for several days at room temperature. If we store them in the refrigerator afterward, the freshness period can become longer. Before eating, rinse the fruit with clean water to remove the salt from the surface.
